Founded in 1800 as a soy sauce brewer in the canal town of Sawara, Shoujyou has refined the craft of tsukudani simmered delicacies for over two centuries. Its signature ikadayaki, skewered lake smelt arranged like a raft, is sold in an atmospheric shophouse dating from 1832.
